Shrimp & Rice Scampi

 

Shrimp & Rice Scampi

Utensils: electric skillet

2 cans (14 oz. each) chicken broth (3 1/2 cups)
1 3/4 cup uncooked instant long-grain white rice
1 tbsp. olive oil
1 lb. fresh or frozen large shrimp, shelled and deveined
4 cloves garlic, minced
2 tbsp. lemon juice
2 green onions, thinly sliced

Place the oil, shrimp and garlic in the electric skillet.  Season with Darn Good.  Cover and cook for five minutes, medium heat.  Remove the cover and stir until shrimp is done (will be pink when done).  Remove shrimp and garlic and place in glass dish. 
Heat the broth in the Electric Skillet ---  Bring to a boil.  Add rice, cover, and reduce heat to medium.  Cook for 10-12 minutes. 

Place shrimp in bowls. Stir lemon juice into broth mixture and pour over shrimp. Top with onions. Serves 4.
