Utensils: Electric Skillet or Large Skilllet
3-4 Boneless, Skinless chicken breasts (can be frozen)
1 jar picante sauce (you choose how hot)
2 cans of black beans
1 large potato, shredded
8 to 12 oz. mozzarella, cheddar or Colby cheese, shredded
1 cup crushed tortilla chips
Preheat large skillet to medium heat for 3 minutes. Partially thaw and turn frozen chicken in the skillet. (Leave covered). After 10 minutes add the 2 cans of beans and the jar of picante sauce and crushed tortilla chips. Place potatoes in skillet. Cover and cook for about 20 minutes. Uncover and cut up chicken into cubes. Place cheese into mixture. Cover to melt cheese for about 2-3 minutes. Serve as casserole or on flour tortillas.
