Pork Chops and Black-eyed Pea Skillet
Utensils: electric skilletIngredients:
1 sm. onion, sliced lengthwise
1 clove garlic, minced
1 lb. pork, cut into 3-inch pieces
2 (15 oz.) cans blackeye peas, drained and rinsed (about 3
1/2 c.)
1 c. water
1 (14 to 16 oz.) can tomatoes
1/2 c. chopped green pepper
2 tbsp. packed brown sugar
3 tsp. Darn Good Seasoning
Directions:
Sauté onion and garlic in electric skillet; add pork and brown; sprinkle with Darn Good; add beans and water. Cover and simmer at 275 degrees for 1 hour or until beans and ribs are tender. Add tomatoes, green pepper and brown sugar. Cover and cook gently for 20 to 30 minutes. Makes 4 main dish servings.
